Smart Recipes, American Recipes, Vegetables Recipes, Recipes Vegetables American Raspberry Shortbread Bars PT1H15M Serves 12 Ingredients: 1.5 Cups Unsalted Butter 0.75 Cup Light Brown Sugar 0.75 Cup Granulated Sugar 2 Teaspoons Pure Vanilla Extract 0.75 Cup Almond Flour 2.75 Cup All-Purpose Flour 1.5 Cups Seedless Raspberry Jam 0.5 Cup Powdered Sugar Preheat oven to 325 degrees. Coat a 9x13-inch baking pan with cooking spray and set aside. In a stand mixer on high speed, add butter & sugars and beat until creamy. Add vanilla and salt and beat until well combined. On low speed, beat almond flour and all-purpose flour into the creamed butter until it forms a smooth dough. Divide dough into even halves and press one into the bottom of the prepared pan to form a crust. Wrap the other half in plastic wrap and refrigerate for 30 minutes. Bake first crust until edges are light brown, 18-20 minutes. Remove from the oven and set aside. In a medium bowl, add jam and stir until smooth. With a spatula, spread jam evenly over the partly baked crust. Crumble chilled dough over the jam to create a crumb topping. Bake until the topping is golden brown & crisp, 28-30 minutes. Allow to cool then dust with powdered sugar & cut into bars.
