Bacon, Lettuce & Fried Green Tomato Sandwich Recipe | PT30M Serves 4 Ingredients: 0.5 Cup All Purpose Flour 3 Eggs 0.5 Cup Yellow Cornmeal 1 Pound Green Tomatoes 0.25 Teaspoon Kosher Salt & Freshly Ground Pepper 8 Slices Of Texas Toast 8 Slices Of Thickcut Bacon 4 Leaves Boston Bibb Lettuce 0.5 Cup Canola Oil 4 Tablespoons Mayonnaise In three separate bowls, place flour, cornmeal and eggs respectively. Coat the tomato slices with flour, then dip into eggs and finally, coat with cornmeal evenly. In a large skillet, heat oil over medium-high heat and fry the tomato slices in batches for about one to two minutes per side. Transfer the tomato slices to a paper towel-lined plate to drain. Season immediately with salt and pepper. Spread a thin layer of mayonnaise on a slice of bread; top with lettuce, fried green tomato, bacon and remaining bread slice. Cut in half and serve.
