The fork-tender pork is slowly cooked with traditional Mexican spices, and a shot of pale ale. Slow Cooker Pork TacosPT8H15M Serves 6 Ingredients: 3 Pounds Pork Shoulder Roast 4 Tablespoons Achiote Paste 1 Tablespoon Onion Powder 1 Tablespoon Apple Cider Vinegar 1 Tablespoon Garlic Powder 1 Tablespoon Kosher Salt 1.5 Teaspoons Freshly Ground Black Pepper 1 Large Orange 12 Ounces Pale Ale Beer 1 Large Red Onion 1 Lime 12 Corn Tortillas 0.25 Cup Fresh Cilantro Leaves In the bottom of a slow cooker, combine orange juice & zest, apple cider vinegar, achiote paste, onion powder, garlic powder, 1 tablespoon of salt and black pepper and stir to combine. Add pork roast and coat with mixture evenly. Pour the beer over the surface of the pork roast, and set the slow cooker on low and cook for 8 hours. Meanwhile, in a small bowl, combine onion, lime juice, and salt and toss to coat well. Set aside at room temperature for at least 1-2 hours. Set aside. Remove pork from slow cooker and transfer to a work surface, shred into bitesize pieces, discarding any large fat peices. Transfer the cooking liquid to a bowl, and remove any fat that settles at the top. Return the shredded pork and reserved cooking liquid to the slow cooker and stir to combine well. Meanwhile, warm the corn tortillas in the microwave (wrapped in damp paper towel) for about 30 seconds. To assemble tacos, place pork mixture in warmed tortillas and top with pickled onions. Garnish with cilantro and serve. For a truley authentic feel, also garnish with radish slices.
