Bring them to a boil and cook until the potatoes are fork-tender, about 10 minutes. Drain potatoes in a colander, and allow to cool slightly. After the potatoes are cool to the touch, slice into 1/4 inch slices. In a cast iron skillet over medium-high heat, fry bacon until brown and crispy, about 6 minutes.
