Ingredients:
1 Tablespoon Kosher Salt1 Teaspoon Sugar1 Teaspoon Onion Powder1 Teaspoon Garlic Powder1 Teaspoon Cayenne Pepper1 Teaspoon Paprika1 Teaspoon Ground Mustard4 Pounds Whole Fryer Chicken12 Ounces High Quality Wheat BeerPreheat the oven to 350 degrees. Meanwhile, line a 9-inch baking dish with a piece of foil, and place a roasting rack inside.In a small bowl, mix together sugar, mustard, spices and salt. With your fingers, carefully loosen the skin of the chicken and rub sugar mixture under and over skin generously. Tuck wings under chicken and then arrange into a baking dish. Cover the baking dish and refrigerate for at least 1 hour.Remove half of the beer from the can. With a can opener, make large holes in the top of the can. Place the beer can, into the cavity of the chicken and arrange inside the roasting rack.Bake for 1 1/2 hours, and allow to rest (tented with foil) for atleast 15 minutes before carving.
