0.13 Cup Vegetable Oil0.5 Medium Red Bell Pepper0.5 Large Onion4 Cloves Garlic0.5 Tablespoon Ground Cumin1 Tablespoons Chili Powder0.5 Pound Ground Beef0.5 Pound Ground Pork1 Teaspoons Salt0.5 Teaspoon Freshly Ground Black Pepper1 Cups Canned Red Kidney Beans1 Cups Frozen Corn1 Cups Tomato Sauce1 Cups Mexican Style Diced Tomatoes1 Medium Jalapenos0.5 Cup Shredded Cheddar Cheese0.5 Cup Sour Cream1.5 Medium Bunch Of ScallionsIn a large cast-iron skillet over medium heat, heat the oil and saute bell pepper & onion until the onions are soft & translucent, for about 5-7 minutes. Stir in the minced garlic, cumin, and chili powder, and saute for another minute. Add the ground meat and cook until complelty browned and cooked through, about 10 minutes.In a 6-quart slow cooker, add the meat & veggie mixture, beans, frozen corn, tomato sauce, and diced tomatoes & all their juices. Stir in the minced jalapenos.Cover and cook on low for 8 hours.Ladle the chili into large bowls and garnish with a sprinkle of shredded cheese, sour cream and sprinkle of green onions.
In this recipe, I call for canned kidney beans for a quick & easy recipe. I often forgo the canned beans and cook the beans from dry. If you choose to do this - I would soak the beans overnight, and parboil for at least 60 minutes.
