2 Tablespoons Butter8 Slices Bacon1 Large Onion4 Ribs Celery0.25 Teaspoon Salt & Freshly Ground Black Pepper0.5 Cup American IPA1 Pound Herb Stuffing Mix1 Cup Shredded Sharp White Cheddar1 Small Bunch Fresh Thyme Leaves2 Cups Chicken Stock1 Teaspoon Worcestershire Sauce2 Large Eggs1 Small Bunch Freshly ParsleyPreheat oven to 425 degrees. Heat a Dutch oven over medium heat, and fry the bacon for 8 minutes or until crispy. Drain on a paper towel–lined plate, then dice into bite-sized pieces. In the same Dutch oven, add onion, celery, salt, and pepper along with the bacon fat. Cook for 5 minutes or until softened. Stir in the beer and simmer, for 2 minutes, while deglazing any brown bits from the bottom of the pan. Add bread, a cup of cheddar cheese, thyme, and half of the cooked bacon and toss to combine. Add broth, Worcestershire, and eggs and mix together fully.Transfer the stuffing to a buttered baking dish and sprinkle with the remaining cheese and bacon. Cover with a lightly greased sheet of aluminum foil and bake for 45-50 minutes.Rest for 10 minutes before serving, and garnish with minced parsley.
