Apple Brined Pork Chops With GlazePT40M Serves 4 Ingredients: 4 Cups Apple Cider 3.5 Cups Water 0.5 Cup Salt 0.5 Cup Packed Golden Brown Sugar 3 Tablespoons Roughly Ground Black Pepper 2 Teaspoons Dried Sage 4 Center-Cut Pork Loin Chops 1 Tablespoon Olive Oil 1 Large Onion 2 Granny Smith Apples 0.75 Cup Chicken Stock 0.25 Cup Apple Brandy 2 Tablespoons Raisins 0.5 Teaspoon Ground Ginger 0.33 Cup Whipping Cream 1 Tablespoon Dijon Mustard 1 Teaspoon Ground Cinnamon 0.125 Teaspoon Salt & Freshly Ground Black Pepper In large bowl, combine 3.5 cups of apple cider, water, brown sugar, sage, cinnamon, salt and black pepper and mix till sugar is dissolved. Cover the pork chops in the brine (use a large plate to insure the pork chops stay in the brine). Cover and refrigerate for at least 4 hours, or overnight. Drain pork chops and with paper towels, pat dry. In a heavy large skillet, heat oil over high heat and cook pork chops for about 3 minutes per side. Transfer pork chops to a plate. In the same skillet, add onion over medium heat. Cook, covered for about 5 minutes, stirring occasionally. Add apples and sauté for another 3 minutes. Add the remaining 1/2 cup of cider, broth, brandy, raisins and ginger and scrape up browned bits from bottom of the skillet. Stir in cream and mustard and bring to a boil. Reduce heat to medium-low and stir in cooked pork chops. Cook, covered for about 3 minutes. With a slotted spoon, transfer pork chops onto a platter. Cook sauce for about 4 minutes, stirring occasionally. Season with salt and pepper. Pour sauce over pork chops and serve.
