Stir in the remaining cider, stock, brandy, raisins, salt & pepper, and ginger (make sure to scrape up any brown bits from the bottom of the pan). Stir in the cream and bring to a boil and reduce to a simmer. Return the chops to the skillet and warm through for about 5 minutes.
