Cover the pork chops in the brine (use a large plate to ensure the pork chops stay in the brine). Cover and refrigerate for at least 4 hours, or overnight. Drain pork chops and with paper towels, pat dry. In a heavy large skillet, heat oil over high heat and cook pork chops for about 3 minutes per side. Set aside. In the same skillet, sauté the onion and apples over medium heat for about 10 minutes. Add apples and sauté for another 3 minutes. Stir in the remaining cider, stock, brandy, raisins, salt & pepper and ginger (make sure to scrape up any brown bits from the bottom of the pan). Stir in the cream and bring to a boil and reduce to a simmer. Return the chops to the skillet and warm through for about 5 minutes.
