Smart Recipes, Indian Recipes, Vegetables,Pork Recipes, Recipes Vegetables,Pork Indian Curried Peaches & Pork Chops PT30M Serves 4 Ingredients: 3 Tablespoons Peach Preserves 2 Tablespoons Dijon Mustard 2 Teaspoons Homemade Curry Powder 1 Small Bunch Fresh Thyme 1 Teaspoon Honey 1 Tablespoon Vegetable Oil 4 Medium Boneless Pork Chops 0.25 Small Bunch Of Green Onions 2 Medium Peaches 2 Tablespoons Fresh Cilantro In a medium mixing bowl, mix the peach preserves, Dijon mustard, curry powder, thyme, and honey. In a large cast-iron skillet over medium-high heat, heat the oil and add the pork chops. Cook for 4 minutes on each side, until cooked through completely. In the same skillet, add green onions and saute until tender, about 1 minute. Add peaches to the skillet and continue cooking for another 5 minutes. Arrange the pork chops on a bed of rice and spoon peach mixture over them. Garnish with cilantro.
