Chop the greens coarsely and set them aside. Slice the beets into 1/4-inch rounds. In a large bowl, toss chard with beet greens. In a large skillet over medium-high heat, melt butter and sauté shallots, beets, and salt & pepper for 2 minutes. Reduce the heat and cook for 15 minutes, until beets are tender. Add chard and greens mixture and cook for 5 minutes. Stir in wine, cover the skillet, and cook another 7 minutes. Arrange beet slices in four even stacks and top with mixed greens and a sprinkle of cheese.
