Smart Recipes, American Recipes, Seafood Recipes, Recipes Seafood American Grilled Shrimp Tacos Grilled Shrimp Tacos Recipe | PT45M Serves 8 Ingredients: 0.25 Cup Greek Yogurt 0.25 Cup Mayonnaise 1 Medium Lime 1 Chipotle Pepper In Adobo 4 Tablespoons Unsalted Butter 2 Cloves Garlic 1 Serrano Pepper 0.33 Cup High Quality Tequila 1 Large Lime 0.25 Cup Extra-Virgin Olive Oil 0.125 Teaspoon Salt 1 Pound Large Raw Shrimp 6 Soft-Taco-Sized Flour Or Corn Tortillas 3 Cups Coleslaw Mix 2 Medium Roma Tomatoes 1 Medium Avocado 0.5 Cup Fresh Cilantro In a small bowl, combine the yogurt, mayonnaise, juice of 1 lime, and chipotle pepper and mix until well combined. Meanwhile, in a small skillet melt butter, and saute the garlic and minced serrano pepper for about 3 minutes, or until fragrant. Remove from the heat and carefully stir in the tequila, juice of 1 lime, olive oil, and salt. Refrigerate sauce and marinade for at least 30 minutes before serving. In a resealable plastic bag, combine the shrimp and cooled marinade. Seal the bag and with your hands, massage to coat evenly. Refrigerate for at least 30 minutes up to 1 hour, turning occasionally. Preheat the grill pan over medium-high heat, and lightly grease with cooking spray. Meanwhile, remove the shrimp from the marinade and thread onto skewers. Grill shrimp for 2 minutes per side. Assemble the tacos, place 2-3 shrimp on each tortilla, topped with coleslaw mix, tomatoes, avocado slices and a sprinkle of cilantro. Top with a healthy dollop of the sauce and a wedge of lime if desired.
