Refrigerate overnight. Allow the chicken to rest at room temperature for at least 20 minutes before cooking. Meanwhile, in a large shallow dish, combine cornmeal, 1 1/2 cups flour, 1/4 teaspoon of salt and black pepper. Dredge the chicken with flour and spice mixture evenly and shake off any excess. In a large Dutch oven, heat 4 cups of oil over medium-high heat until it reaches 325 degrees. Deep-fry for about 20 minutes turning chicken occasionally. Transfer cooked chicken to a paper towel-lined plate to drain. Set aside. Preheat waffle iron and lightly grease with an even coating of cooking spray. Meanwhile, in a large bowl, combine remaining flour, sugar, baking powder, cinnamon, and salt. Make a small well in the center of flour mixture and pour eggs, milk, 1/2 cup oil and vanilla extract. Mix until just combined. Cook the waffles according to manufacturer’s instructions or until golden brown. To serve, plate each waffle with a generous dollop of butter and maple syrup and top with 2 pieces of chicken.
