Ingredients:
0.75 Cup Fino Sherry0.25 Cup Ginger Syrup1 Cup Sparling Cava1 Small Lime1 Medium Lemon1 Cup Sugar1 Cup Water2 Tablespoons Fresh Ginger1 Bay Leaf0.5 Teaspoon Freshly Ground Black PepperGinger syrup: In a saucepan over medium-low heat, add water, sugar, ginger, bay leaf and pepper and stir until sugar dissolves. Remove from the heat and allow to cool. Transfer to a glass jar, seal with a lid, and refrigerate overnight. Use a fine-mesh sieve to strain & discard solids before using.In a cocktail pitcher, combine sherry & ginger syrup. Stir well to combine. Fill 4 tumblers with ice cubes and fill each 3/4 way full with cocktail. Top each drink off with 1/4 cup Cava and garnish with lemon & lime wedges to serve.
