Cuban Yuca FingersPT45M Serves 6 Ingredients: 3 Pounds Fresh Yuca 0 Vegetable Oil 1 Tablespoon Salt In a pan of salted water, add yuca chunks and bring to a boil over high heat. Reduce heat to medium and boil for about 20-25 minutes. In a colander, drain yucca chunks and keep aside to cool. Cut yuca chunks into 3-5-inch-long fingers lengthwise. Arrange yucca fries onto a wax paper lined baking sheet in a single layer. With a plastic wrap, cover baking sheet loosely and refrigerate overnight. In a large pan, heat oil to 350 degrees over medium heat and fry yuca fingers in batches till golden brown from all sides. Transfer fries onto paper towel lined plate to drain. Sprinkle with salt and serve immediately alongside your favorite sauce.
