6 Skinless & Skinless Chicken Breasts1 Teaspoon Dried Sage1 Teaspoon Kosher Salt0.25 Teaspoon Freshly Ground Black Pepper3 Teaspoons Olive Oil1 Pound Baby Red Potatoes5 Ounces Baby Spinach2 Cloves Garlic0.25 Pound Thinly Sliced Prosciutto1 Cup Shredded Provolone CheeseArrange a rack in the middle of the oven and preheat broiler on high. Meanwhile, season the chicken with the sage, 1/2 teaspoon of salt & pepper and set aside.In a large cast iron skillet over medium-high heat, heat 2 tablespoons oil and brown the chicken for 4 minutes per side, and transfer to a plate, and tent with a sheet of aliminum foil. Reduce heat to medium and add the remaining oil. Arrange the potatoes in a single layer, and season with the remaining salt and pepper, cook for 4 minutes per side. Stir in the spinach and minced garlic, stirring frequently, and continue to cook until the spinach is just wilted about 2 minutes. Arrange the browned chicken in a single layer over the spinach and poatoto mixture, and top each breast with a slice of prosciutto. Sprinkle the shredded cheese over the surface of the chicken, and bake in the preheated oven until the cheese is melted & bubbly.
