Beets are extremely healthy and tasty! They have a deep, earthy flavor and are rich in betanins and antioxidants. Just like most veggies, you can get a whole bunch of beets for pretty cheap! And because they are root vegetables, like potatoes, they have a pretty long growing season!
Cauliflower is one of the best substitutes for potatoes in terms of texture and taste. Unlike potatoes, you can't over-mash cauliflower — it holds up without getting gummy because it has a low starch content. Mashed cauliflower also has a delicious nutty, earthy flavor that pairs well with a variety of meals, and it is packed with nutrients.
Winter Squash Puree
There comes a time every year when your local grocery store will be just overflowing with squash. There are so many wonderful things you can do with squash, and surprise, surprise! Mash is one of them. No matter what squash we're talking about, you can roast them until they're soft and create a delicious, creamy, flavorful alternative to mashed potatoes that still has a very similar consistency.
Mashed Celery Root
Celery root, another awesome root vegetable, can be a bit intimidating because of the mess of roots, but once you cut it down to the good stuff inside, it is extremely rewarding. As with all of the other wonderful veggies mentioned here, celery root is high in nutrients, such as vitamin K and vitamin C, and is also very low in calories! It has a unique, mellow but still full flavor that makes a delicious mash for any meal.
