3 Pounds Potatoes2 Chicken Breasts12 Button Mushrooms4 Thick-Cut Bacon Strips0.5 Large Red Onion0.66 Cup Grated Cheddar Cheese0.5 Cup Chicken Stock0.25 Cup Half & Half0.25 Teaspoon Salt & Freshly Ground Black Pepper0.25 Teaspoon Garlic Powder0.25 Cup Scallions2 Tablespoons Fresh Italian ParsleyPreheat the oven to 450 degrees.Heat a skillet over medium heat and cook bacon until crispy. Add onion and cook until golden brown. With a slotted spoon, transfer the bacon and onions to a bowl. Set aside.Heat the same skillet with bacon grease over high heat and saute mushrooms until softened, stirring frequently. Remove from heat and set aside.Meanwhile, in a bowl, combine chicken, potatoes, garlic powder, salt and black pepper and toss to coat well. In another bowl, mix chicken stock and half & half and stir to combine.In the bottom of a casserole dish, arrange the potato and chicken mixture, followed by half of the bacon and onion mixture, then 1/3 cup of cheese, then the mushrooms and finally with the remaining bacon mixture. Pour stock mixture over the surface of the casserole. Season with salt and black pepper.Cover tightly with aluminum foil, and bake for 15 minutes. Reduce the temperature of the oven to 375 and bake for another 40 minutes. Remove the foil and bake for another 30 minutes.Serve hot with the garnish of remaining cheese, parsley and scallions.
