Meanwhile, in a shallow bowl, combine flour, breadcrumbs and red pepper. Stir to combine and set aside. Arrange chicken breasts in the middle of tow sheets of plastic wrap, and pound with a meat mallet until each breast is about 1/4 inch thick. Dip each piece of chicken in the egg whites, allowing any excess liquid to drip off and then coast generously with breadcrumb mixture. In a cast iron skillet, heat the olive oil over medium heat and brown the chicken breasts for about 3 minutes per side. Arrange the chicken in a large casserole dish, and top with pasta sauce and shredded cheeses. Bake for 20 minutes in the preheated oven, or until the cheese is golden brown and delicious.
