Line a sheet pan with Silpat or parchment paper and set aside.
In a stand mixer on high speed, beat sugar & butter until fluffy. Mix in the egg, buttermilk & vanilla. Add red food coloring and mix until incorporated.In a large bowl, whisk together flour, baking soda, salt, and cocoa. Gradually beat the flour mixture into the creamy mixture until just combined. Use a small ice cream scoop to scoop out dough onto prepared sheet pan at least 2 inches apart. Roll the dough balls a bit to make the surface smooth.Bake until cookies have spread out and are set, about 7-8 minutes. Remove pan from the oven and allow to sit for 2 minutes. Transfer cookies to wire rack to completely cool.Meanwhile, in the stand mixer, cream together cream cheese, powdered sugar, butter, and vanilla extract until combined. Place mixture in a piping bag and set aside.Once cookies are cooled, pipe cream cheese filling in the center of a cookie and top with another cookie. Place in the refrigerator until the filling has set, at least 3 hours. Store cookies in an airtight container in the refrigerator.
