2 Pounds Sharp Cheddar Cheese2 Cloves Garlic1 Small Onion0.25 Teaspoon Dried Red Pepper Flakes0.5 Teaspoon Hot Sauce12 Ounces Amber Beer0.25 Teaspoon Salt & Freshly Ground Black Pepper1 Small Bunch Fresh Thyme LeavesIn a stand mixer on low speed, beat cheese with garlic, onion, red pepper flakes, and hot sauce. Slowly add beer beat until combined. Increase to high speed and beat mixture until creamy, about 1 minute. Season with salt & pepper. Cover the mixture and refrigerate for at least 2 hours or overnight. Garnish with a thyme leaves and serve. Keep leftovers refrigerated in a sealed container for up to 3 days.
