3 Teaspoons Vegetable Oil0.5 Large Onion0.5 Pound Baby Portabella Mushrooms1 Teaspoon Kosher Salt0.5 Cup Swiss Cheese4 Slices Of Sourdough1 Tablespoon Unsalted ButterIn a skillet, heat two teaspoons of oil over medium-high heat and cook onion and 1/2 teaspoon of salt for about 20-30 minutes or until caramelized. Transfer the caramelized onions to a bowl. In the same skillet, heat remaining one teaspoon of oil and cook mushrooms and remaining 1/2 teaspoon of salt for about five minutes. Transfer the mushrooms to a bowl containing the onions, leaving the accumulated liquid in the skillet. Meanwhile, preheat the broiler. Spread softened butter on both sides of the bread. Toast the bread in the broiler, one minute per side. Set aside to cool slightly. Place caramelized onions on bottom bread slice evenly and top with mushrooms, followed by Swiss cheese and cover. Meanwhile, preheat the sandwich press to high heat, and press for 3 or 4 minutes.
