3 Cups Water2 Pounds Baby Yukon Potatoes1 Teaspoons Salt1 Teaspoon Freshly Ground Black Pepper1 Fresh Bay Leaf1 Large Egg0.13 Cup Extra-Virgin Olive Oil1 Clove Garlic2 Tablespoons Chives0.25 Teaspoon Salt0.25 Cup Grapeseed Oil0.13 Cup Extra-Virgin Olive Oil0.13 Teaspoon Cayenne Pepper1.5 Tablespoons Fresh Lemon Juice0.13 Teaspoon Freshly Ground Black PepperIn a Dutch oven, combine the potatoes and a bay leaf in boiling salted water, and simmer for 20 minutes. Or until the potatoes are fork tender. Drain and reserve a 1/2 cup of cooking liquid. Set aside.In a small saucepan, drape a kitchen towel and place a small metal bowl in the middle. In the small bowl, add egg yolk, garlic, 1/4 teaspoon salt and 2 teaspoons water. Whisk continually while drizzling grapeseed oil in, one teaspoon at a time until mixture is thickened. Keep whisking while adding olive oil in a slow stream. When the mixture is thick & creamy, stir in cayenne, lemon juice, and pepper.With a potato masher, mash the potatoes and mix with 1/4 cup olive oil and reserved liquid. Place the saucepan over medium-high heat and cook until potatoes are heated through, stirring constantly for 2-3 minutes. Remove from heat and stir in half of the aioli. In a large serving bowl, transfer potatoes and top with remaining aioli. Garnish with chives.
