24 Chocolate Sandwich Cookies6 Tablespoons Butter12 Ounces Dark Or Semi-Sweet Chocolate Chips1.25 Cups Heavy Cream2 Pints Fresh Strawberries0.25 Cup AlmondsPreheat oven to 350 degrees.Meanwhile, in a large mixing bowl, combine the cookie crumbs and melted butter. Transfer the mixture to a tart pan and press firmly into the bottom and 1 to 2 inches up the sides. Bake the crust for 8 minutes. Remove crust from the oven and cool completely.Meanwhile, place the chopped chocolate into a heat-proof bowl. In a small saucepan over medium-low heat, heat the heavy cream until very hot but not boiling.Pour the cream over the chocolate and let it sit for 4 minutes. Using a rubber spatula, stir until the chocolate is completely melted and the chocolate and cream are combined.Pour the chocolate ganache over the cookie crust. Place in the refrigerator and let it set for 2 hours. Decorate the top of the tart with strawberries, or berries of your choosing, by arranging them in the center, closely touching. Garnish with the chopped almonds.
