Combine the shredded Monterrey Jack cheese and crumbled queso fresco in mixing bowl. Set aside. In a skillet, melt 3 tablespoons of butter over medium heat, and brown off the ground chorizo. Add the minced garlic. Cook for another 2 minutes, until the garlic, is fragrant. Season to taste with salt and pepper. Remove skillet from heat.
