12 Large Eggs0 Skins From 15 Red Onions2 Tablespoons White Vinegar4.5 Cups Water2 Tablespoons Olive OilAdd onion skins, water and white vinegar to a saucepan and bring the mixture to a boil. Reduce the heat, cover the lid and let it simmer for 3o minutes.Strain the mixture and allow to cool in a bowl at room temperature. Add the strained dye and eggs to a saucepan. Bring the mixture to a boil. Reduce the heat to low, cover the pan and simmer for 12 to 15 minutes. Remove the eggs and place them on a rack to cool.Once cooled, coat the eggs with olive oil or polish with the paper towel. Refrigerate until use.
