Ingredients:
1 Tablespoon Extra-Virgin Olive Oil1 Tablespoon Butter1.5 Pound Lean Ground Beef1.5 Pound Ground Pork0.5 Pound Pancetta0.5 Teaspoon Salt & Freshly Ground Black Pepper1 Large Onion2 Large Celery Stalks1 Large Carrot5 Cloves Garlic1 Cup Red Wine4 Cups Tomato Sauce2 Cups Milk1 Cup Beef StockIn a large saucepan over medium-high heat, heat oil and butter and stir in the beef, pork, pancetta, salt & pepper, and saute for about 10 minutes. Stir in the diced onion, celery and carrots and cook for another 3 minutes. Stir in the garlic and cook for another minute or so. Stir in the red wine, and cook for another 3 minutes, and stir in the tomato sauce, milk and beef stock. Stir well to cominbe. Reduce the heat to low, and simmer for 4 hours, stirring every 30 minutes to prevent scorching the sauce.
