5 Cups Water12 Graham Crackers5 Tablespoons Unsalted Butter2 Tablespoons Granulated Sugar0.125 Tablespoon Salt2 Pounds Cream Cheese2 Cups Granulated Sugar3 Tablespoons Corn Starch4 Teaspoons Pure Vanilla Extract0.5 Large Lemon0.25 Teaspoon Salt6 Large Eggs0.5 Cup Sour CreamPreheat the oven to 375 degrees. Wrap a springform pan with foil, and lightly coat with cooking spray.In a food processor, combine the graham crackers, melted butter, sugar, salt, and pulse until well combined. Press the crumbs into the springform pan, and bake for 10 minutes. Set aside. Reduce the oven to 325 degrees. Bring the 5 Cups of water to a rapid boil.In a stand mixer on medium speed, combine the cream cheese, sugar and cornstarch and blend until smooth. Stir in the vanilla, lemon juice and zest, and salt, and blend on low speed until just combined. Slowly add the eggs, one at a time, and mix on low. Carefully fold in the sour cream into this mixture. Place the springform pan in a large roasting pan & carefully pour the batter on top of the crust. Pour the boiling water in the roasting pan, and bake the cake for 1 1/2 hour or until the center is set. Allow the cheesecake to cool for 45 minutes, in the waterbath, before chilling in the refrigerator for 8 hours if not overnight.
