10 Ounce Sliced Lamb0 Peanut Oil15 Slices (¾-Inch) Gingerroot15 Green Onion Pieces1 Teaspoon Tabasco Sauce1 Teaspoon Accent1.5 Teaspoon Salt1.25 Teaspoon Sugar0.25 Teaspoon Sesame Oil0.25 Teaspoon White Pepper0.5 Cup Plus 1 Teaspoon Rice Wine1 Tablespoon Plus 1 Teaspoon Cornstarch1 Teaspoon Light Soy Sauce0.5 Teaspoon Rice Wine1 Clove GarlicIn a large bowl, add lamb, garlic, soy sauce, 1 teaspoon of wine, 1 tablespoons of cornstarch, 1/4 teaspoon of sugar, 1/2 teaspoon of accent and 1/2 teaspoon of salt and toss to coat well. Refrigerate to marinate for about 1-2 hours. In a wok, heat about 4-inch of peanut oil and deep fry lamb slices for about 3 minutes, stirring continuously. Immediately remove wok from heat. Through a strainer, strain oil into a deep metal bowl. In the same wok, heat about 1 tablespoon of fresh peanut oil and stir fry cooked lamb, green onions, ginger, Tabasco sauce, 1/2 teaspoon of accent, 1/3 teaspoon of sugar, 1/4 teaspoon of sesame oil, 1/3 teaspoon of salt and white pepper for about 45 seconds. Add 1/2 cup of rice wine and cook for about 1 minute. In a small bowl, dissolve 1 teaspoon of cornstarch in 1/4 cup cold water. Add cornstarch mixture, stirring continuously. Cook till the mixture becomes thick.
