2 Tablespoons Vegetable Oil1 Teaspoon Grated Ginger1 Hot Red Chili Pepper0.5 Cup Dry Roasted Cashews2 Cloves Garlic Sliced1.5 Pounds Poached Chicken Breasts0.5 Cup Chicken Broth1 Tablespoon Cornstarch1 Tablespoon Ketchup1.5 Tablespoons Rice Vinegar1 Tablespoon Soy Sauce2 Teaspoons sambal oelek1 Tablespoon Brown Sugar0 LemonIn a bowl, add broth, cornstarch, ketchup, vinegar, soy sauce, Sambal, brown sugar and lemon juice and mix until well combined. Keep aside. In a skillet, heat oil over medium-high heat and sauté ginger and chili pepper for about two minutes. Stir in cashews and garlic and stir-fry for about two minutes. Stir in chicken and stir-fry for about two to three minutes. Reduce the heat to medium-low and stir in the sauce. Cook for about two to four minutes.
