0.33 Cup Olive Oil1 Tablespoon Fresh Lemon Juice1 Teaspoon Dried Italian Seasoning1 Pound Angel Hair Pasta0.75 Pound Medium Shrimps1 Cup Cherry Tomatoes1 Can Chickpeas1 Can Black Olives0.25 Cup Fresh Basil0.25 Cup Fresh Parsley3 Scallions0.5 Cup Feta Cheese0.25 Teaspoon Freshly Ground PepperBring a large pot of salted water to a boil. Add pasta and cook for about 10-12 minutes until pasta is tender. Drain and rinse under cold running water and drain again. Whisk together oil, lemon juice and Italian seasoning in a bowl then set aside.
Mix pasta, shrimp, tomatoes, chickpeas, olives, basil, parsley and green onions in a large bowl until well combined. Pour dressing over pasta mixture and toss well to coat. Sprinkle with cheese and pepper. Place in refrigerator for 4-6 hours. Serve chilled.
