Line a baking sheet with a parchment paper. Arrange prosciutto onto prepared baking sheet. Bake for about 10-15 minutes. Remove from oven and keep on a paper towel lined plate to cool. Then crumble prosciutto. In a pan of salted boiling water, cook potatoes for about 10 minutes. Drain potatoes and transfer to a large bowl. With a fork or potato masher, mash potatoes.
