0.25 Pound Prosciutto3 Medium Russet Potatoes0.5 Cup Milk0.33 Cup Unsalted Butter2 Large Eggs0.5 Cup Parmesan Cheese1 Tablespoon Fresh Thyme0.75 Cup All Purpose Flour1 Teaspoon Baking Powder1 Teaspoon Salt0.5 Teaspoon Black PepperPreheat oven to 400 degrees. Line a baking sheet with a parchment paper. Arrange prosciutto onto prepared baking sheet. Bake for about 10-15 minutes. Remove from oven and keep on a paper towel lined plate to cool. Then crumble prosciutto.In a pan of salted boiling water, cook potatoes for about 10 minutes. Drain potatoes and transfer to a large bowl. With a fork or potato masher, mash potatoes. Add cheese, butter, milk, eggs and thyme and stir to combine well. In another bowl, mix together flour, salt, baking powder and pepper. Add flour mixture into potato mixture and stir until just combined. Fold in crumbled prosciutto.Preheat a waffle iron and then grease with cooking oil spray. Add about 1 cup of mixture onto the waffle iron and cook for about 4 minutes. Repeat with remaining mixture.
