6 Medium Bell Peppers1 Pound Ground Beef1 Pound Ground Pork1 Medium Onion2 Cloves Garlic3 Cups Cauliflower1 Cup Carrot6 Ounces Tomato Paste1 Tablespoon Dried Oregano1 Teaspoon Dried Thyme0.25 Teaspoon Salt0.125 Teaspoon Freshly Ground Black Pepper1 Cup Chicken StockCut the tops off (reserve the tops) off of the bell peppers and remove all the seeds and membranes. Set the peppers into the slow cooker.Meanwhile, in the bowl of a food processor combine all the remaining ingredients (except the chicken stock), and pulse until the vegetables and ground meat are finely ground and combined. Stuff the peppers with the meat mixture, then set the pepper tops back on the peppers. Pour the chicken broth into the crockpot around the peppers.Set crockpot to low, cover and cook for about 8 hours, or until the peppers are tender and meat is cooked through.
