Ingredients:
6 Cups All-Purpose Flour3 Teaspoons Baking Powder1.5 Teaspoons Baking Soda2 Tablespoons Sugar1 Tablespoon Salt2 Large Eggs4 Tablespoons Butter2 Cups Buttermilk2 Cups Pancake MixFor Instant Pancake Mix: Combine flour, baking powder, baking soda, sugar and salt in place in an air-tight container. Shake well to mix. Store in the container for up to 3 months. To prepare pancakes: Preheat electric griddle to 350 degrees. You may also heat a large skillet over medium-high heat.In a large bowl, add two cups of prepared pancake mix. Use a tablespoon to form a small well in the center of the mix. In a small bowl, add eggs & whisk until frothy. Pour eggs into the well of the pancake mix and stir to combine. Add buttermilk to the mixture and mix until it is just combined and not over-mixed. Allow batter to rest for at least 5 minutes. Coat the griddle or skillet lightly with cooking spray. Make 2 pancakes with 1/4 cup batter each. Cook until bottoms of the pancakes are slightly golden with set bubbles, about 2-3 minutes. Flip both pancakes and cook the other side until golden brown, another 2-3 minutes. Repeat until batter is gone, adding more cooking spray as needed. Serve pancakes hot topped with fresh fruit or syrup.
