2 Cups All-Purpose Flour0.75 Cup Sugar1 Teaspoon Baking Powder1 Teaspoon Baking Soda0.25 Teaspoon Salt1 Cup Sour Cream2 Eggs0.5 Cup Canola Oil2 Tablespoons Poppy Seeds2 Tablespoons Milk0.5 Teaspoon Lemon Extract0.5 Teaspoon Vanilla ExtractPreheat oven to 400 degrees. Grease or paper line 3 mini muffin trays to make 42 muffins. Whisk together flour, sugar, baking powder, baking soda and salt in a large mixing bowl. In another bowl, combine remaining ingredients until well blended. Fold in flour mixture until just moistened. Fill the muffin cups 2/3 full and bake 12 to 15 minutes or until a toothpick inserted in center comes out clean. Cool on wire a rack before removing from pans and serve warm.
