Meanwhile, brown the bacon in a 5-quart pot and heat over high. Cover the pot and cook until crisp, stirring once or twice. Add the bell peppers, celery, onions, and bay leaves, scraping the bottom. Cover the pot and saute the onions for 5 minutes. Add the drained beans with 2 tablespoons of prepared seasoning mix, cover and cook for 10 minutes, scraping the bottom every now and then. Add tomatoes and cook another 10 minutes. Add garlic and cook for another 5 minutes. Stir in 2 cups of stock, brown sugar and 2 tablespoons of seasoning mix. Boil the mixture and then reduce heat to low to simmer 20 minutes, stirring occasionally. Add 2 more cups of stock, cover and simmer 1 hour more, stirring occasionally. Add remaining seasoning mix, salt, and stock, cover and simmer another 20 minutes or until beans are tender. Serve with steamed rice, and a vegetable (fried okra would be fantastic with this dish).
