2 Cans Chickpeas2 Cloves Fresh Garlic1 Small Red Onion0.25 Teaspoon Cayenne Pepper0.25 Cup Parmesan0.5 Teaspoon Salt0.125 Teaspoon Freshly Cracked Pepper0.5 Cup Bread Crumbs1 Large Egg4 Tablespoons Vegetable Oil1 Can Tomato Paste1 Medium Yellow Onion1 Can Diced Tomatoes0.5 Teaspoon Dried Oregano0.5 Teaspoon Dried Basil0.5 Teaspoon Brown SugarPlace drained chickpeas in a food processor. Add red onion, parsley leaves, cayenne, garlic, salt and cracked pepper. Process until a paste of rough consistency forms. Remove into a bowl and add bread crumbs and egg to the chickpea paste. Mix until thoroughly combined. Roll the dough into small balls taking 1 tablespoon of dough in your wet hands at a time and shaping into ball. Heat oil in a heavy skillet over medium heat. Cook chickpea balls in batches until evenly golden browned. Once all of the balls have been cooked, add diced onion to the same skillet and sauté until softened. Then add diced tomatoes, tomato paste, oregano, basil, brown sugar and 1 cup water. Stir to thoroughly combine and let simmer for 5 to 10 minutes. Season with salt to your taste. Serve balls over a plate topped with marinara.
