Ingredients:
0.5 Medium White Onion0.5 Cup Mushrooms2 Cloves Garlic3 Stalks Celery1 Cup Firm Tofu1 Cup Old Fashioned Rolled Oats3 Tablespoons Parsley1.5 Cups Lentils3 Tablespoons Soy Sauce3 Tablespoons Ketchup1 Teaspoon Dried Thyme1 Teaspoon Dried Basil1 Teaspoon Dried FennelPreheat the oven to 350º F. Grease two regular loaf pans.
Take mushrooms, onion, celery and garlic in a sauté pan with a splash of water and cook until tender. Season with salt and pepper.
In a large bowl, add crumbled tofu, cooked lentils, oats, handful of parsley and sautéed vegetables. Then sprinkle fresh or dried herbs of your choice. Drizzle soy sauce and enough ketchup to hold the loaf together. If it’s still crumbly add more ketchup to it. Fold mixture into the loaf pans and press the mixture to tightly pack up into the pan. Bake for 50 minutes.
