0.25 Cup Good Olive Oil9 Cloves Garlic0.33 Cup Dry White Wine1 Tablespoon Grated Lemon Zest2 Tablespoons Freshly Squeezed Lemon Juice1.5 Teaspoons Dried Oregano1 Teaspoon Fresh Thyme Leaves0 To Taste Kosher Salt & Freshly Ground Black Pepper4 Medium Boneless Chicken Breasts1 LemonPreheat oven to 400 degrees.In a small pan, heat oil over medium-low heat and sauté garlic for about 1 minute. Remove from heat and stir in white wine, lemon juice, lemon zest, thyme, oregano and 1 teaspoon of salt. Transfer mixture into a 12x9-inch baking dish.With paper towels, pat dry chicken breasts. Coat chicken breasts with olive oil and sprinkle with salt and pepper generously. In baking dish, arrange chicken breasts over sauce, skin side up. Cut lemon into 8 wedges and tuck into chicken pieces. Bake for about 30-40 minutes or till chicken is cooked through.Remove from oven and with a piece of foil, cover the baking dish and keep aside for about 10 minutes before serving.
