Ingredients:
1 Medium Sweet Potato16 Ounces White Beans0.75 Teaspoon Apple Cider Vinegar1 Tablespoon Tahini0.5 Cup White Onion1 Teaspoon Garlic Powder1 Teaspoon Chipotle Powder1 Cup Greens0.33 Cup Panko Crumbs0.5 Teaspoon Salt0.25 Teaspoon Black Pepper1 Medium Avocado1 Tablespoon Virgin Coconut Oil6 Burger Buns1 Medium Tomato2 Large Avocados2 Cups Lettuce1 Red OnionPreheat oven to 400 degrees and bake sweet potatoes for 40-60 minutes or until tender. Keep the oven on for later use.
Mash potato and beans in a large bowl using a fork. Add in onions, cider, tahini, onion, garlic powder, chipotle, chopped greens, salt, and pepper. Mash again to combine ingredients and make 6 equal-sized patties. Coat patties in panko crumbs.
In a cast-iron skillet, heat coconut oil. Place patties over the skillet and cook for 3-4 per side until lightly golden.
Transfer patties to a greased baking sheet and bake for 15 minutes.
Top with your favorite spreads on burger buns, place patties and top with tomato, avocado, lettuce and onions.
