4 Medium Boneless Center-Cut Loin Pork Chops0.5 Cup Extra Virgin Olive Oil0.5 Teaspoon Kosher Salt0.75 Teaspoon Freshly Ground Black Pepper12 Ounces Small Red Potatoes3 Tablespoons Balsamic Vinegar1 Tablespoon Fresh Thyme1 Medium Red Onion1 Ounce Gorgonzola Cheese1 Tablespoon Tomato Paste2 Tablespoons Fresh Flat-Leaf ParsleyPreheat oven to 425 degrees F. Rub pork with salt and pepper, ¼ teaspoon each. Cook chops in a large heavy roasted pan heated with 2 tablespoons of oil over high heat, 3 minutes each side or until browned (not cooked completely). Move chops to a plate, turn down the heat to medium high and place halved potatoes over the pan, keeping cut side down. Cook for just 2 minutes and remove from heat.In a small bowl, combine vinegar, tomato paste, 2 tablespoons oil and ½ teaspoon pepper and mix well. In another bowl, combine 2 tablespoons of above prepared balsamic mixture with onion, thyme, potato and mushrooms and mix well. Add this mixture to a baking pan and bake for 25 minutes, stirring every 10 minutes. Place pork chops over mushroom mixture and bake again for 10 minutes. Remove pork chops, sprinkle vegetables with remaining ¼ teaspoon salt. Divide vegetables, pork chops, remaining balsamic vinegar and cheese equally between 4 serving plates. Serve.
