2 Tablespoons Extra Virgin Olive Oil2 Large Leeks1 Teaspoon Fresh Thyme1.5 Teaspoons Kosher Salt0.5 Teaspoon Freshly Ground Black Pepper1.5 Pounds Red Potatoes1.5 Cups Chicken Stock1 Cup Grated Cheddar CheesePreheat oven to 400 degrees. Line a sheet tray with parchment paper.In a cast iron skillet, heat oil over medium-high heat. Add leeks, thyme, salt & pepper, and saute for 5 minutes. Transfer potatoes into skillet with leeks and toss to combine.Transfer mixture to large casserole dish and place on prepared sheet tray. Pour stock over mixture and top with cheese.Bake for 45 minutes until top is golden brown.
