2 Slices White Onion8 Ounces Mini Bell Pepper0 To Taste Salt And Freshly Ground Pepper4 Medium Tilapia Fillets8 Corn Tortillas1 Small Jalapeño Pepper8 Lime Wedges0 Cooking SprayPreheat grill over high and coat with cooking spray. Grill bell peppers and onion slices for about 6 minutes per side. Once grilled, remove vegetables from grill and then halve onion slices. Halve bell peppers, remove stems and seeds and slice bell peppers thinly. Combine onion and bell pepper in a bowl and season with salt and pepper. Rub fish with salt and pepper. Heat a large skillet coated with cooking spray over medium high heat. Sear fish for 3 minutes, flip and cook 3 more minutes or until to your desired doneness. Divide onion mixture, fish and jalapeno equally between warmed tortillas and serve with lime wedges.
