Ingredients:
1 Pound Fresh Ginger Root5 Cups Water1.25 Pound Granulated SugarLine a cookie sheet with a sheet of parchment paper, and arrange a lightly greased wire cooling rack on top of the prepared cookie sheet. Reduce the heat to medium, and simmer for 20 minutes, stirring frequently.Arrange the candied ginger in a single layer on the prepared cooling rack, and allow to cool at room tempature completly. Store in airtight containers for up to 2 weeks.
