3 Large Eggs2.75 Cups Skim/Low Fat Or Almond Milk1 Cup All-Purpose Flour0 Icing Sugar2 Tablespoons Sugar1 Teaspoon Vanilla Extract2 Tablespoons OilIn a blender, add flour, 2 tablespoons of sugar, eggs, almond milk, oil and 1 teaspoon vanilla extract and pulse till smooth and creamy.Heat a lightly greased 8-inch nonstick skillet. Place about 1/4 cup of mixture and swirl the pan to spread in a thin layer. Cook for about 1-2 minutes. Flip and cook for about 20-30 seconds. Repeat with remaining mixture.For the filling: Spread macerated strawberries and cream mixture over a quarter of each crepe and carefully, fold in half and then into half again. Top with remaining macerated strawberries evenly and sprinkle with icing sugar. Serve immediately.
