1.5 Pounds Ground Beef5.5 Cups Cooked Rice3 Yellow Bell Peppers3 Red Bell Peppers14 Ounces Italian Style Chopped Tomatoes2 Tablespoons Tomato Paste1 Cup Beef Stock0.25 Teaspoon Cayenne Pepper0.5 Cup Parmigiano-Reggiano Cheese1 Cup Mozzarella Cheese0.25 Cup Flat-Leaf Parsley0.5 Onion6 Cloves Garlic0 To Taste Salt0 To Taste Freshly Ground Black Pepper2 Tablespoon Olive OilPreheat the oven to 375 degrees.Cut the tops of each bell pepper and carefully, remove the seeds and membranes. Cut a thin slice from the bottom part of each pepper to have a flat surface. With a fork, carefully poke 4 holes below. In a pan, heat olive oil and sauté onion and garlic until tender. Add beef and cook till browned completely. Stir in cheese, tomatoes, parsley, tomato paste, beef stock and cayenne pepper and cook for about 5 minutes. Season with salt and black pepper and remove from heat.Stuff bell peppers with beef mixture evenly and arrange in a deep baking dish.With a piece of foil, cover the baking dish tightly and bake for about 10 minutes.Remove the foil and sprinkle each pepper with mozzarella cheese generously. Bake, uncovered for about 15 minutes.
