0.75 Cup Seedless All-Fruit Raspberry Jam0.25 Cup Balsamic Vinegar0.5 Teaspoon Salt0.25 Teaspoon Freshly Ground Pepper4 Boneless, Skinless Chicken Breasts2.5 Teaspoons Extra-Virgin Olive Oil0.5 Cup Shallots1.5 Teaspoons Fresh ThymeIn a small pan, add jam and vinegar over medium-low heat and cook for about 3-4 minutes, stirring occasionally. Remove from heat and stir in salt and black pepper. Keep aside to cool slightly. Transfer 1/2 cup of sauce into a bowl and reserve it.In a large sealable plastic bag, place remaining sauce and chicken breasts. Seal the bag and shake gently to coat.
