0.5 Cup Raw Sunflower Seeds2 Tablespoons Nutritional Yeast0.66 Cup Water1 Clove Garlic2 Tablespoons Fresh Lemon Juice1 Teaspoon Sea Salt0 To Taste Black Pepper10 Ounces Brown Rice Rotini3 Stalks Broccoli1 Tablespoon Extra-Virgin Olive Oil1 Can Artichoke HeartsTo prepare Alfredo sauce: Place sunflower seeds to a small bowl, pour hot water and leave to soak for 20 minutes.
Add soaked sunflower seeds to a high power blender and blend with 2/3 cup water, lemon juice, garlic clove, yeast and salt and pepper to taste.
Heat olive oil over medium heat. Stir in broccoli florets, cherry tomatoes, kale and salt and pepper and cook until vegetables are tender or about 20 minutes, stirring occasionally.
Add in artichoke hearts and cook only 2 to 3 minutes or until heated through.
Take cooked pasta in a serving bowl, stir in Alfredo sauce and add a small amount of pasta water if needed. Stir in cooked vegetables and toss to coat. Sprinkle with red pepper flakes and serve.
