1 Bunch Broccoli1 14-Ounce Box Firm Tofu1.5 Tablespoons Soy Sauce1 Tablespoon Chinese Cooking Sherry0.25 Cup Vegetable Stock Or Water0.25 Teaspoon Salt2.5 Teaspoons Minced Garlic2.5 Teaspoon Minced Ginger0.5 Teaspoon Red Pepper Flakes2 Tablespoons Peanut Oil Or Canola Oil0.25 Cup Lightly Roasted Unsalted Peanuts1 Red Bell Pepper2 Tablespoons Chopped Cilantro0.5 Teaspoon SugarCut broccoli stems and then peel them. Cut each stem lengthwise and then julienne into 2-inch pieces. Cut broccoli crowns in thin slices. In a large bowl, mix together stems, crowns and florets. With paper towels, pat dry tofu completely. In a small bowl, add sherry, soy sauce and stock and mix.In a second small bowl, mix together sugar and salt. In a third small bowl, mix together ginger, garlic and red pepper flakes.In a 14-inch flat-bottomed wok, heat 1 tablespoon of oil and stir fry tofu for about 1-2 minutes. Transfer tofu to a plate. In the same wok, heat remaining oil and sauté ginger, garlic and red pepper flakes for about 10 seconds. Add broccoli, red peppers and peanuts and stir-fry for 1 minute. Add sugar mixture and toss the mixture. Add sherry mixture and stir fry for about 1-2 minutes. Add in tofu and cilantro and stir fry for about 30 seconds. Serve with additional soy sauce and hot noodles.
