Cut each stem lengthwise and then julienne into 2-inch pieces. Cut broccoli crowns in thin slices. In a large bowl, mix together stems, crowns and florets. With paper towels, pat dry tofu completely. In a small bowl, add sherry, soy sauce and stock and mix. In a second small bowl, mix together sugar and salt. In a third small bowl, mix together ginger, garlic and red pepper flakes. In a 14-inch flat-bottomed wok, heat 1 tablespoon of oil and stir fry tofu for about 1-2 minutes. Transfer tofu to a plate. In the same wok, heat remaining oil and sauté ginger, garlic and red pepper flakes for about 10 seconds. Add broccoli, red peppers and peanuts and stir-fry for 1 minute. Add sugar mixture and toss the mixture. Add sherry mixture and stir fry for about 1-2 minutes. Add in tofu and cilantro and stir fry for about 30 seconds. Serve with additional soy sauce and hot noodles.
