In a small microwave-safe bowl, add heavy cream and butter and microwave for about 1-2 minutes, or until butter is melted. Remove from microwave and set aside. In a small pan over medium-high heat, add corn syrup, water & sugar and bring to a boil, stirring gently and continuously. Cover and cook for about 1 minute. Uncover and cook for about 5-10 minutes, stirring continuously. Add about a 1/4 cup of butter mixture to the sugar mixture and stir to combine. Add remaining butter mixture and cook for about until temperature on a candy thermometer reaches 240 degrees, about 10-15 minutes. Immediately pour candy into prepared pan evenly. Set aside to cool for about 25-30 minutes. While candy is still a little warm, sprinkle with salt and allow to cool for about 3 1/2 hours. Carefully unmold the caramel onto a cutting board. If caramel looks too soft, then refrigerate for about 30-45 minutes. With a sharp knife, cut into 1-inch x 1/2- inch rectangles. Transfer pieces to a platter and cover with plastic wrap before serving. If desired, wrap individual caramel pieces in small squares of wax paper and store in a sealed container for at least 2 months
